業務用厨房では，排気フード前の調理者の通過が空気の大きな乱れを発生させる。そのため，業務用厨房に適した排気装置を選択するためには，まず，排気フード前での調理者の通過を実際に検出する必要がある。この作業を人手で行うと，多大な労力と時間がかかるため，監視カメラの撮影映像から調理者の通過を自動検出することが望まれている。そこで，排気フード前に設置した監視カメラの撮影映像から，調理者の通過を自動検出する方式を開発した。開発方式は，調理者同士の接近や重なり，他の調理者の動作などに影響を受けないようにするため，連続画像を並べた時空間データから通過で発生する大きな動きを抽出し，通過のみを検出する方式となっている。評価実験結果の中で，排気フード前で撮影した8時間の映像により，調理者の通過が正しく検出できたことを示す。

概要 （英文）

Movements of cooks make disturbance of airflow in commercial kitchens. The disturbance reduces amount of effective air exhausted from ventilators. Therefore, to design commercial kitchens, appropriate ventilators should be selected with guidelines. To make the guidelines for the ventilator selection, frequency of the disturbance caused by cooks movements should be measured at the side of ventilation hoods in the commercial kitchens.This report proposes a method that detects walking cooks and tracks them at the side of ventilation hoods in the commercial kitchens. In the method, a new spatio-temporal representation that indicates walking direction, speed and position of cooks is proposed to detect walking cooks. The effectiveness of the method is verified in eight-hour video scene that was taken in a commercial kitchen.
